Za'atar has graced Middle Eastern tables since biblical times — a fragrant, tangy mix of thyme, sumac and toasted sesame that's as happy as a dip as it is a rub. Mix it with good olive oil and dunk warm flatbread, or scatter it over just about anything for an instant taste of the Levant. A bright, fragrant meal on the table in 30 to 40 minutes.
What it tastes like
Herby, nutty and tangy — earthy thyme, oregano and marjoram with toasted sesame and a bright, lemony hit of sumac. Zesty and aromatic rather than hot — fresh and moreish.
Cook this tonight
- Mix with olive oil into a paste, spread on flatbread or pitta and bake, or use as a dip for warm bread (man'oushe-style).
- Sprinkle over hummus, labneh, roasted vegetables, eggs or salads as a finishing seasoning.
- Rub onto chicken, lamb or fish before grilling or BBQing for a fragrant, herby crust.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Stir into olive oil to make an instant dip or dressing, or use it dry as a rub and finishing sprinkle. It's brilliant scattered over almost anything just before serving — eggs, avocado toast, roast veg — so keep it close to hand and experiment.
