Massaman is the gentle giant of Thai curries — rich, warm and rounded rather than fiery, with a fascinating history (it was most likely brought to Thailand by Persian merchants centuries ago). If you love Thai flavours but find some curries too hot, this could become your favourite. A comforting fakeaway on the table in 30 to 40 minutes.
What it tastes like
Warm, rounded and aromatic — paprika and cumin with galangal, lime leaf and lemon, and warming cinnamon, cardamom and clove. Gently spiced and comforting rather than hot, with a soft background chilli warmth.
Cook this tonight
- Simmer with coconut milk, chicken or beef and chunks of potato for a classic massaman curry — serve with rice.
- Make it meat-free with sweet potato, squash and chickpeas for a rich veggie curry.
- Stir into a coconut broth with prawns or tofu for a quick, fragrant supper.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Fry the blend gently in a little oil to release the aromatics, then build your curry with coconut milk and your choice of meat or veg, and let it simmer until tender. A squeeze of lime at the end lifts it beautifully. It's just as good meat-free, so experiment.
