How to use it

A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Add it to hot oil at the start of a stir-fry to release the aromatics, or stir into coconut milk for a fast curry base. A squeeze of lime and a handful of fresh herbs at the end really lifts it. It's as good on tofu and veg as it is on meat and fish, so experiment.
