Tandoori is the curry-house classic that started it all — in fact, it's the dish that first set Dave off on the Spice Masters journey. Vivid, smoky and aromatic, it's made for the BBQ, which gets you about as close to a real tandoor oven as a home kitchen can. A takeaway favourite you can grill at home in 30 to 40 minutes.
What it tastes like
Warm, smoky and aromatic — coriander and cumin with paprika, garlic and a gentle chilli warmth, rounded out by cinnamon and clove. Mild to medium, fragrant rather than fiery.
Cook this tonight
- Mix with yoghurt, marinate chicken, then BBQ or grill — serve in warm naan with salad, lemon and minted yoghurt.
- Make a tandoori curry with chicken or a soya alternative, served on rice with naan on the side.
- Rub onto paneer, cauliflower or prawns and roast for a quick, colourful tandoori plate.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. For the classic marinade, mix with natural yoghurt and a little oil, coat your chicken and leave it for as long as you can — overnight is ideal. Cook it hot and fast on the BBQ or under the grill for that authentic char. It's just as good on paneer and veg, so experiment.
