Tagine Spice Blend — Blend No.19

A tagine is Morocco's great slow-cooked stew — fragrant, tender and deeply comforting. Named after the cone-shaped pot it's traditionally cooked in, ours works just as happily in a slow cooker, casserole dish or heavy pot. Prep it in minutes, let it cook low and slow, and come home to a warming family dinner that fills the kitchen with the scent of a Marrakech souk.

What it tastes like

Warm, fragrant and gently spiced — ginger, cumin and coriander with smoked paprika and cinnamon, and a little chilli for a soft background warmth. Aromatic and comforting rather than hot.

Cook this tonight

• Brown lamb, chicken or chickpeas, stir in the blend with onions, tomatoes and apricots, then slow-cook until tender — serve over couscous.
• Let it cook all day in the slow cooker for a hands-off dinner ready when you walk in.
• Stir through roasted root veg or a chickpea-and-squash stew for a hearty meat-free tagine.

How to use it

A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Brown your meat or veg, stir in the blend and add your liquid, then let it cook low and slow — the longer the better. You can prep it the morning or night before, leave it in the fridge, and simply cook when you're ready. It's just as good with meat or veg, so experiment.
