What it tastes like
Zesty, garlicky and gently fiery — chilli and cayenne with garlic, kaffir lime and basil, lifted by ginger and oregano. A subtle, building heat that lets the tangy, aromatic flavours shine rather than just burning.
Cook this tonight
- Rub onto chicken (thighs, wings or a butterflied bird) and grill, roast or BBQ for piri piri chicken — serve with rice, slaw and crispy potatoes.
- Toss with potato wedges or fries before roasting for moreish piri piri chips.
- Stir into rice, prawns or roasted veg, or use as a marinade loosened with oil and lemon.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five, and you can build the heat to taste. Loosen with a little oil and lemon to make a marinade and let your chicken sit in it for as long as you can before cooking. It's as good on veg and potatoes as it is on meat, so experiment.
