Paella Spice Blend — Blend No.15

Paella is Spain's great sharing dish — and ours is built around real saffron, the golden heart of an authentic paella. Despite the restaurant reputation, it's surprisingly simple: add the blend to rice with your choice of meat, seafood or veg, and you've a showstopping pan of Valencia on the table in 30 to 40 minutes.

What it tastes like

Golden, savoury and aromatic — real saffron and smoked paprika at the heart, with garlic, rosemary, lemon peel and parsley. Fragrant and warming rather than hot, with that unmistakable paella colour and aroma.

Cook this tonight

  • Stir through rice with chicken, chorizo, prawns and peas for a classic mixed paella — no special pan needed, a large frying pan works.
  • Make a vegetarian paella with peppers, beans and artichokes for a meat-free feast.
  • Use as a rub on barbecued seafood or grilled chicken for a Spanish twist.

How to use it

A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Stir it into your rice as it cooks so the saffron can release its colour and aroma, and resist the urge to over-stir — a good paella forms a lovely golden base. It's just as happy with meat, seafood or veg, so make it your way.
