Kofta turns up everywhere from Greece to India — minced meat, onion and spices, shaped into balls, patties or sausages. Ours leans Greek, the kind you'd be served in a kebab house with a dollop of tzatziki. Mix it through your mince and you've got a homemade kebab on the table in 30 to 40 minutes — every bit as good as the takeaway, without the wait.
What it tastes like
Warm, savoury and aromatic — coriander, cumin and garlic with ginger, cardamom and allspice, and just a little chilli for warmth. Fragrant and well-rounded rather than hot.
Cook this tonight
- Mix through lamb or beef mince, shape into koftas and grill, fry or BBQ — serve in warm pittas with tzatziki and salad.
- Form into patties for homemade kofta burgers with all the trimmings.
- Stir into a chickpea or lentil mix and shape into veggie koftas for a meat-free version.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Work it through your mince with a little onion, shape, and let it sit for a few minutes before cooking. No BBQ weather? These are just as good under the grill or fried in a pan. They work beautifully with lamb, beef or a veggie mix, so experiment.
