Jerk is the bold, smoky taste of Jamaica — equally at home as a BBQ rub or the base for a proper rustic curry. We've kept ours well-balanced rather than blow-your-head-off hot, so the whole family can enjoy it (and you can always add more chilli if you like it fierce). Dinner in 30 to 45 minutes.

What it tastes like

Warm, smoky and aromatic — allspice and thyme at the heart, with garlic, paprika, nutmeg and clove, and a gentle cayenne kick. A touch of brown sugar rounds it off. Spicy and full of character, but not overpowering.

Cook this tonight

  • Rub onto chicken thighs or skewers and cook on the BBQ in under 20 minutes — serve with salad, coleslaw and fries.
  • Use as the base for a rustic Jamaican jerk curry with chicken or veg — ready in 30 to 45 minutes.
  • Season fish, pork or roasted sweet potato for an easy island-inspired plate.

How to use it

A little goes a long way — one to two teaspoons is plenty for a family meal for four or five, and you can add more chilli while cooking if you want extra heat. Use it dry as a rub, or loosen with a little oil and lime for a marinade. It works beautifully with white and red meat, fish and veg alike, so experiment.
