Smoked chilli and citrus is one of those pairings that does most of the work for you. Chipotle brings the smoke and a steady, rounded heat; lime leaf and lemon peel lift the whole thing so it never sits heavy. It's the flavour behind a good taco or fajita — the sort a kit tries to imitate with a sachet and a sauce pouch.

What it tastes like

Smoky and warm with a bright citrus edge. Chipotle and smoked paprika underneath, lime leaf and lemon peel over the top, with cumin, garlic and oregano filling out the middle. Medium heat — noticeable, not fierce.

Cook this tonight

• Toss with sliced chicken and peppers, fry hot and fast, and pile into warm tortillas with soured cream and lime.
• Rub onto white fish or salmon before baking or grilling — the citrus does the job a marinade normally would.
• Scatter over sheet-pan vegetables, corn on the cob, or wedges before roasting.
• Stir a teaspoon through cooked rice with a squeeze of lime for a side that takes seconds.

How to use it

One to two teaspoons is enough for a family meal for four or five. For meat and fish, work it in dry a few minutes before cooking and let it sit — no oil or marinade needed. For vegetables, toss with a little oil first so it holds. Add more towards the end if you want the citrus brighter.
