Chermoula is North Africa's great marinade — a herby, citrusy blend that's the traditional partner for fish, but just as good on meat and veg. Loosen it with oil and lemon and you've got a marinade that turns a simple fillet into a sun-soaked Moroccan dinner in 30 to 40 minutes.
What it tastes like
Fresh, herby and aromatic — smoked paprika and cumin with parsley, garlic and bright lemon peel, warmed by ginger, cinnamon and a touch of cayenne. Vibrant rather than hot.
Cook this tonight
- Mix with oil and lemon, slather over white fish or salmon, then bake or grill — serve with couscous and roast veg.
- Toss through roasted carrots, peppers and cauliflower for a bright, herby side or veggie main.
- Rub onto chicken or lamb before grilling for a fragrant North African twist.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Chermoula shines as a marinade: stir into olive oil with a squeeze of lemon and let your fish or meat sit in it for 20–30 minutes before cooking. It's equally happy as a dry rub or stirred through roast veg, so experiment.
