Cajun is Louisiana on a plate — the bold, smoky seasoning of the Deep South, built for flavour above all. It's brilliant as a BBQ rub and just as good in a one-pot dinner, and it'll have something on the table in 30 to 40 minutes.
What it tastes like
Smoky, savoury and warming — paprika and cumin with garlic, onion and herbs, lifted by chilli and cayenne. There's a gentle building heat, but it's the smoky depth that leads.
Cook this tonight
- Rub generously over a spatchcock chicken and cook it on the BBQ in under 40 minutes — serve with coleslaw, salad and crusty bread.
- Toss with prawns or white fish and pan-fry for a quick, punchy supper.
- Stir into a one-pot rice dish with chicken and sausage for a gumbo-style family dinner.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five, and you can build the heat to taste. Use it dry as a rub, or loosen with a little oil for a marinade. Cajun was traditionally cooked in a single iron pot over an open fire, so it loves a hearty one-pan dinner — but it's just as happy on the BBQ.
