Baharat simply means "spices" in Arabic — it's the warm, all-purpose backbone of Middle Eastern home cooking. Sweet and aromatic rather than hot, it's the blend that makes meatballs, roast veg and rice taste like a proper spread, and it does it in 30 to 40 minutes.
What it tastes like
Warm, sweet and aromatic — cumin and coriander grounded by cinnamon, clove, nutmeg and cardamom, with a gentle peppery lift. Fragrant and gentle, not fiery.
Cook this tonight
- Mix into lamb or beef mince for kofta or meatballs — serve with flatbread and yoghurt.
- Toss through roasted vegetables, squash or cauliflower before they go in the oven.
- Stir into rice, lentils or a tomato sauce to lift an everyday dinner.
How to use it
A little goes a long way — one to two teaspoons is plenty for a family meal for four or five. Add it early in cooking so the warm spices have time to open up, and don't be afraid to use it generously as a rub on lamb or chicken. It's just as happy in a veggie dish as a meaty one, so experiment.
