This flavourful and easy-to-make dish combines tender chicken with a delicious Za'atar-spiced couscous, perfect for a wholesome weeknight dinner. The aromatic and versatile Za'atar spice blend adds depth and complexity to this simple yet satisfying meal.
Ingredients
- 4/5 boneless, skinless chicken breasts
- 2 tsp Za'atar spice blend
- 2 tbsp olive oil
- Salt and pepper, to taste
- 360g couscous
- 450ml vegetable or chicken stock
- 1 lemon, zested and juiced
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh mint
- 100g crumbled feta cheese
- 50g toasted pine nuts
Directions
Preheat the oven to 200°C (392°F).
Rub the chicken breasts with 1 tsp of Za'atar spice blend, olive oil, salt, and pepper. Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the centre.
While the chicken is cooking, prepare the couscous. In a large bowl, combine the couscous and the remaining 1 tsp of Za'atar spice blend. Pour the hot vegetable or chicken stock over the couscous, cover with a lid or cling film, and let it sit for 5-10 minutes, or until the liquid is absorbed and the couscous is tender.
Fluff the couscous with a fork, then stir in the lemon zest, lemon juice, parsley, mint, crumbled feta cheese, and toasted pine nuts.
Serve the Za'atar-spiced chicken on a bed of couscous, garnished with additional parsley and mint, if desired.
Recipe Note
The Za'atar spice blend has been used for centuries in Middle Eastern cuisine, adding a unique flavour and aroma to a variety of dishes. This recipe showcases the versatility of Za'atar, using it to enhance both the chicken and couscous elements of the dish. The combination of tender, spiced chicken and fragrant couscous creates a delicious and satisfying meal that pays homage to the rich history of Za'atar.
