BBQ Chicken Wraps with Couscous

This quick and easy SpiceMasters Speedy BBQ Chicken Slices dish brings the essence of a summer barbecue to your table in around 30 minutes. Tender chicken slices, seasoned with SpiceMasters Ultimate BBQ Seasoning Rub, are grilled alongside colourful vegetables. Served in soft wraps and with fluffy couscous, it offers a perfect blend of flavours and textures for a satisfying, customisable meal.
Ingredients
- 750g boneless, skinless chicken breast, cut into strips big enough to BBQ
- 2 tsp Spicemasters Ultimate BBQ Seasoning Rub
- 1 tablespoons olive oil
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper), cut into strips
- 1 large red onion (about 150g), cut into strips
- 250g cherry tomatoes
- 1 tbsp fresh coriander, chopped (optional for garnish)
- 1 lemon, cut into wedges (for serving)
- 250g couscous
- 300ml hot vegetable or chicken stock
- 1 tablespoon butter
- Salt and pepper to taste
- Pack of large soft wraps (about 25cm in diameter)
Directions
In a large bowl, combine the sliced chicken slices with 1 tablespoons of olive oil and the SpiceMasters Ultimate BBQ Seasoning Rub. Mix well to coat evenly.
Preheat the BBQ or grill pan to medium-high heat.
While the BBQ is heating, prepare the couscous. Place the couscous in a heatproof bowl. Pour the hot stock over it, add the butter, and cover with cling film and let stand.
Once the BBQ is hot, place the seasoned chicken slices directly on the grill. Cook for about 4 to 6 minutes on each side, or until fully cooked through.
On a BBQ side ring or hob fry the sliced bell peppers, onions, and cherry tomatoes, tossing occasionally, for about 5-7 minutes until tender.
When the chicken and vegetables are cooked, fluff the couscous with a fork and season with salt and pepper to taste.
Warm the wraps according to package instructions (usually a few seconds in the microwave or on a cooler part of the BBQ).
Remove the chicken and slice into thinner shreds suitable for your wraps.
Serve the grilled chicken slices and vegetables alongside the couscous, warm wraps, and lemon wedges. If using garnish with fresh coriander Allow everyone to assemble their own wraps with the grilled chicken, vegetables, couscous, and a squeeze of lemon juice.
