Harissa is widely used in North Africa. This is one of our hottest spices but we have created a subtle blend to allow the flavours to come through. This dish is easy to cook and will become a firm family favourite.

METHOD

1. STEP

Prepare your ingredients.

 

2. STEP

Mix the Harissa in a bowl with 2 tablespoons of water. Add the chicken breasts and mix well. Leave in the fridge for at least one hour.

 

3. STEP

Once the chicken has marinated, add a tablespoon of oil to a pan over a medium heat.

 

4. STEP

Fry the onion for 30 seconds, then add the chicken and carrots and continue to fry for another 4 to 5 minutes. Stirring occasionally.

 

5. STEP

Add the chopped tomatoes, green beans and the honey. Bring to the boil for 3 to 4 minutes or until your chicken is cooked.

 

6. STEP

Serve and enjoy. This dish goes well with couscous and/or flat bread.

  • 600g chicken breast - diced

  • 100g fresh green beans cut into 2cm pieces

  • ½ tin of chopped tomatoes

  • 2 tsp Spicemasters Harissa spice mix

  • 2 medium red onions - diced

  • 1 medium carrot - peeled and sliced

  • 2 tbsp of honey

  • 1 tbsp oil

The History of Harissa Spices

North African food has always been flavourful and hearty, but it wasn’t until hot peppers arrived at the continent that the first spice blends predating harissa came to be. The first hot peppers arrived in Europe thanks to the first travels to America, back to Columbus’s first trip to America in 1492. Other New World commodities, such as brown sugar, found their way into Europe as well.

It is believed hot peppers and other American ingredients arrived in North Africa between 1535 and 1574, with the Spanish occupation of the region. As part of this cultural exchange, hot peppers became chilli flakes and smoky paprika; they also met garlic, oregano and cumin seeds. The perfect ingredients for the unique Harissa spice blend were finally united.

The famous Maghrebian cuisine, the heart and soul of North African cooking, was forever changed in a good way, and spicy flavours became one of the most deep-rooted African cooking traditions.

1. Cumin
