Embark on a culinary journey with our Zesty Adobo Chicken, a vibrant dish that marries the bold flavours of Latin America with the lean goodness of chicken breast. This recipe showcases our beautiful adobo spice blend, infusing each bite with a mix of, cumin, paprika, and aromatic herbs. Perfect for a family dinner, this healthier take on a classic will tantalise your taste buds whilst keeping your wellbeing in check.
Ingredients

750g chicken breast, diced

2 tsp Spice Masters Adobo Spice Blend

30ml olive oil

300g brown rice
-
400g mixed bell peppers, sliced

200g cherry tomatoes, halved

1 large red onion, sliced
-
2 cloves garlic, minced

Half a lime juice to taste

1 tbs fresh coriander, chopped (optional)

Salt to taste
Directions
In a large bowl, combine the diced chicken breast with 1tsp of the adobo spice blend and 15ml of olive oil. Mix well to coat and let marinate for 15 minutes.
Meanwhile, cook the brown rice according to package instructions.
Heat the remaining olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until golden brown and cooked through.
Remove the chicken from the skillet and set aside. In the same skillet, add the sliced peppers, onions, and minced garlic. Sauté for 5-6 minutes until the vegetables are tender-crisp.
Return the chicken to the skillet, add the cherry tomatoes, lime juice, and the remaining adobo spice blend. Stir to combine and cook for an additional 2-3 minutes.
Serve the adobo chicken and vegetable mixture over the cooked brown rice. Garnish with fresh coriander.
