Baked Ultimate Pork Chops with Mustard Sauce, Mash & Green Beans

Ingredients
Fresh & Mains
- 4-5 pork chops
- 1kg potatoes, peeled and chopped
- 300g green beans, trimmed
- Butter and a splash of milk (for the mash)
Pantry Staples
- 2 tsp Ultimate Pork spice blend
- 1 tbsp olive oil
- 1 tbsp wholegrain or Dijon mustard
- 150ml double cream (or crème fraîche)
- 150ml chicken or vegetable stock
- 100ml dry cider
- Salt and pepper to taste
For Garnish & Serving
- A scatter of fresh parsley over the chops
Directions
- Heat the oven to 200C (180C fan). Pat the pork chops dry and dust both sides with the Ultimate Pork blend and a little salt.
- Add the chopped potatoes to a pan of salted water, bring to the boil, and simmer 15-18 minutes until tender.
- Heat the oil in an ovenproof skillet over medium-high heat. Sear the chops 1-2 minutes per side to colour, then transfer to the oven for 8-10 minutes until cooked through. Lift onto a plate to rest.
- Put the same skillet back on the hob. Pour in the cider and let it bubble for a minute, scraping up the tasty bits from the bottom of the pan. Add the stock, let it reduce slightly, then stir in the mustard and cream. Simmer 2-3 minutes until glossy and slightly thickened. Season to taste.
- Mash the drained potatoes with butter, a splash of milk and seasoning. Cook the green beans in boiling water 3-4 minutes until just tender, then drain.
- Plate the chops with the mash and green beans, and spoon the sauce generously over the top.
