Ultimate Burgers with Tray-Baked Sweet Potato Wedges & Burger Sauce

Ingredients
Fresh & Mains
- 600g beef mince (around 5 burgers)
- 3 medium sweet potatoes, cut into wedges
- 4–5 burger buns
- Lettuce, sliced tomato and red onion, to serve
- 1 small onion, finely grated (for the burgers)
Pantry Staples
- 2 tsp Ultimate Burger spice blend
- 2 tbsp olive oil
- 4 tbsp mayonnaise (homemade if you have it)
- 2 tbsp tomato ketchup
- 1 tsp mustard (optional)
- 1 small gherkin, finely chopped (optional)
- Salt and pepper to taste
For Garnish & Serving
- A slice of cheese melted over each burger, and a spread of toppings on the table so everyone can build their own
Directions
- Heat the Oven: Preheat the oven to 220°C (200°C fan). Cut the sweet potatoes into even wedges so they cook at the same rate.
- Tray-Bake the Wedges: Toss the wedges with 1 tbsp oil and a good pinch of salt, spread out in a single layer on a tray (don’t crowd them, that’s the secret to crisp edges), and roast for 25–30 minutes, turning once, until golden and tender.
- Make the Burgers: Mix the mince with the grated onion, the Ultimate Burger blend and a good pinch of salt and pepper. Shape into 4–5 patties, pressing a slight dip into the centre of each so they cook flat.
- Make the Burger Sauce: Stir together the mayonnaise, ketchup, mustard and chopped gherkin (if using). Set aside.
- Cook the Burgers: Heat the remaining oil in a skillet (or use the BBQ) over medium-high heat. Cook the burgers for 4–5 minutes per side until cooked through. Add cheese for the last minute if you like, and let it melt.
- Serve: Toast the buns, spread with burger sauce, and build with lettuce, tomato, onion and the burger. Serve with the sweet potato wedges alongside.
