The "Better Than Flat-Pack" Swedish Meatballs

Ingredients

- 500g Lean turkey mince
- 2 large heads of cauliflower, cut into florets
- 1 Onion, finely chopped
- 1 Garlic clove, minced
- 100ml Single cream (or crème fraiche for a lighter option)
- 1 knob of butter
Pantry Staples
- 2 tsp Spice Masters Swedish Meatballs Spice
- 100g Fresh white breadcrumbs (or panko)
- 60ml Semi-skimmed milk (or oat milk)
- 1 tbsp Olive oil
- 500ml Beef or vegetable stock (low salt)
- 1 tbsp Cornflour mixed with 1 tbsp water
- Salt and white pepper
Directions
- Prepare the Panade: In a large bowl, combine the breadcrumbs, Swedish spice blend and milk. Let it sit for 5 minutes until it becomes a thick paste, this is the secret to ensuring lean turkey stays incredibly juicy.
- Shape the Meatballs: Add the turkey mince to the bowl. Mix gently with your hands, avoid overworking the meat to keep the texture light, and roll into golf ball sizes. Chef’s Tip: Wet your hands slightly to stop the mixture from sticking.
- Sear for Flavour: Heat the olive oil in a large frying pan over a medium-high heat. Brown the meatballs on all sides for about 5 minutes until they are golden brown and have a nice crust. Remove them from the pan and set aside, they don't need to be cooked through yet.
- Create the Base Sauce: In the same pan, sauté the onion until it is soft and translucent. Add the garlic and cook for a further 30 seconds.
- Simmer and Thicken: Pour in the stock and bring the liquid to a gentle simmer. Stir in the cornflour slurry until the sauce begins to thicken slightly, then stir through the cream for a rich finish.
- Finish the Meatballs: Return the meatballs to the pan. Simmer gently for 8–10 minutes until the meatballs are cooked through and the sauce is glossy.
- Make the Cauliflower Mash: While the meatballs are simmering, steam or boil the cauliflower for 8 minutes until completely tender. Drain well and squeeze out any excess water with a clean tea towel. Mash by hand with butter, salt, and pepper until perfectly smooth.
- Serve: Spoon the meatballs and lush cream sauce over a generous bed of cauliflower mash and serve immediately.
