Sticky Ultimate BBQ Chicken with BBQ Beans & Jacket Potatoes

Ingredients
Fresh & Mains
- 8–10 chicken thighs or drumsticks (skin on)
- 4–5 baking potatoes
- 1 onion, finely chopped
- 2 cloves garlic, crushed
Pantry Staples
- 2 tbsp Ultimate BBQ spice blend (1 for the sauce, 1 for the beans)
- 2 tbsp olive oil
- 6 tbsp tomato ketchup
- 3 tbsp honey or brown sugar
- 2 tbsp Worcestershire sauce
- 1 tin (400g) chopped tomatoes
- 2 tins (400g each) cannellini or haricot beans, drained
- Butter, for the jackets
- Salt and pepper to taste
For Garnish & Serving
- A dollop of soured cream or grated cheese on the jacket potatoes, and a crisp green salad on the side
Directions
- Bake the Jackets: Preheat the oven to 200°C (180°C fan). Prick the potatoes, rub with a little oil and salt, and bake for around 1 hour until crisp outside and fluffy within. (Start these first, everything else fits around them.)
- Make the BBQ Sauce: In a bowl, mix 1 tsp of the Ultimate BBQ blend with the ketchup, honey (or sugar) and Worcestershire sauce. This is your glaze.
- Start the Chicken: Toss the chicken pieces with a little oil, salt and pepper. Roast in the oven for 25 minutes. Take out, brush generously with the BBQ glaze, and return for another 10–15 minutes, brushing once more, until sticky, caramelised and cooked through.
- Make the BBQ Beans: While the chicken cooks, heat 1 tbsp oil in a saucepan and soften the onion and garlic for 5 minutes. Stir in the remaining Ultimate BBQ blend, the chopped tomatoes and the drained beans. Simmer for 10–15. Add remaining BBQ glaze to the beans once you’ve glazed your chicken.
- Serve: Split the jacket potatoes and add a knob of butter. Serve with the sticky BBQ chicken and a generous spoonful of the homemade BBQ beans.
