Quick Thai Massaman Beef & Potato Curry

Ingredients

  • 400g beef rump or sirloin, thinly sliced into strips
  • 1 tablespoon vegetable oil
  • 1 large onion, roughly chopped
  • 300g parboiled potatoes (or pre-chopped vacuum-packed potatoes), cut into 2cm cubes
  • 2 tablespoons Spice Masters Thai Massaman Spice Blend
  • 400ml light coconut milk
  • 100ml beef stock
  • 1 tablespoon smooth peanut butter (optional, for richness)
  • Fresh coriander or basil, chopped (for garnish, optional)
  • Quick-cook rice, for serving

Directions

  1. Heat the vegetable oil in a large deep frying pan or pot over a medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef and set aside.
  2. Add the chopped onion and potato cubes to the same pan. Saute for 3-4 minutes until the onion softens slightly.
  3. Sprinkle in the 2 tablespoons of Spice Masters Thai Massaman Spice Blend. Stir well to coat the vegetables and cook for 1 minute, allowing the aromas to develop.
  4. Pour in the light coconut milk and beef stock. If using, whisk in the peanut butter until dissolved. Bring the mixture to a gentle simmer.
  5. Return the beef to the pan. Reduce the heat to medium-low and let it simmer for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and the beef is fully cooked.
  6. Serve hot over quick-cook rice, garnished with fresh chopped coriander or basil.
