A delightful twist on a classic Spanish dish using the aromatic Paella Blend. We will be creating a Chicken Thigh Paella, a hearty and flavourful meal that's perfect for feeding a family of four to five. This recipe is inspired by the traditional Valencian paella, but with a focus on chicken thighs, allowing the rich flavours of the spice blend to shine through. This dish is not only a feast for the taste buds but also a colourful addition to your dinner table.
Ingredients
- 8 chicken thighs bone-in, skin-on for extra flavour (Remove if preferred)
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 400g Arborio rice (or short-grain paella rice)
- 2 teaspoons Paella Blend No.15
- 1.5 liters of chicken stock
- 100g frozen peas
- Salt to taste
- Lemon wedges, to serve
Directions
- Prepare the Chicken: Season the chicken thighs with salt and lightly dust with some of the Paella Blend.
- Brown the Chicken: In a large paella pan or a wide, shallow saucepan, heat the olive oil over medium heat. Add the chicken thighs skin-side down and cook until golden brown, about 5 minutes each side. Remove from the pan and set aside.
- Cook the Vegetables: In the same pan, add the onion, garlic, and bell peppers. Cook until the vegetables are softened, about 5 minutes.
- Toast the Rice: Stir in the Arborio rice and the remainder of the Paella Blend, and cook for 2 minutes until the rice is well-coated in the oils and spices.
- Simmer the Paella: Pour in the chicken stock and bring to a simmer. Nestle the browned chicken thighs on top of the rice and reduce the heat to low. Cover and let it cook for 20 minutes.
- Add Peas: Scatter the frozen peas over the paella and cook, uncovered, for an additional 10 minutes, or until the rice is tender and the liquid has been absorbed.
- Rest the Paella: Remove the pan from the heat and let it stand for 5 minutes. The residual heat will finish cooking the rice to perfection.
- Serve: Serve with lemon wedges on the side.
