Introducing the Mexican Chicken Fajita Casserole, another delicious recipe using the same Mexican Chilli Con Carne spice blend. This dish combines the flavours of chicken fajitas with the convenience of a casserole, making it perfect for a weeknight dinner or a casual gathering. Serve this casserole with a side of tortilla chips, salsa, and a dollop of sour cream for a delightful Mexican-inspired meal.

Ingredients
- 500g boneless, skinless chicken breasts, sliced into thin strips
- 2 bell peppers (assorted colours), sliced into thin strips
- 1 large onion, sliced into thin strips
- 2 tsp Mexican Chilli Con Carne spice blend (adjust to taste)
- 250g cooked rice
- 200g grated cheese (e.g. cheddar or Monterey Jack)
- 2 tbsp vegetable or corn oil
- Salt and pepper, to taste
- Optional: additional chilli for a spicier kick
Directions
Preheat the oven to 180°C (350°F).
In a large pan, heat 1 tbsp of vegetable oil over medium heat. Add the chicken strips and cook until browned and cooked through. Remove the chicken from the pan and set aside.
In the same pan, heat another tbsp of vegetable oil and add the sliced bell peppers and onions. Cook until softened.
Add the cooked chicken back to the pan and stir in the Mexican Chilli Con Carne spice blend, ensuring the chicken and vegetables are evenly coated. Season with salt and pepper, and add more chilli if desired.
In a large baking dish, layer half of the cooked rice, followed by half of the chicken and vegetable mixture, and then half of the grated cheese. Repeat the layers with the remaining ingredients.
Bake the casserole for 25-30 minutes, or until the cheese is melted and bubbly.
Serve the Mexican Chicken Fajita Casserole with tortilla chips, salsa, and sour cream.
