Jerk Refried Beans, with Chicken or Tempeh & tortillas

Introducing a delightful fusion of flavours and textures, our Jerk Refried Beans, Tempeh, and Homemade Tortillas recipe is a culinary adventure you won't want to miss. This dish combines the spicy and aromatic jerk seasoning with the creaminess of refried beans and the nutty, earthy taste of tempeh. Served on warm, homemade tortillas.
Ingredients
- 1 small onion – small diced
- 400g tin black beans – lightly drained and crushed in remaining liquid.
- 1 tsp Spicemasters Jerk spice mix
- 360g tempeh or chicken - sliced
- 1 spring onions - sliced
- 1 tsp Spicemasters Jerk spice mix
- 3 tortillas
Directions
Prepare your ingredients.
Heat 2 tablespoons of oil in a large frying pan on a medium heat.
Fry the onion for around 5 minutes until it starts to brown.
Add the jerk seasoning and the crushed beans and cook out for around 5 minutes. Set aside until needed.
Cut your tortillas in triangles and pan fry in a little oil until golden and crisp, remove from pan and place onto some kitchen paper to soak up any excess oil. Sprinkle with a little smoked paprika for an added burst of flavour.
Add 2 tbsp oil to a pan on medium heat, once hot, add the tempeh or chicken.
Add the 2nd spoon of jerk seasoning and cook until brown on all sides and cooked through (about 5-6 mins).
Add the sliced spring onions and cook out for a further 30 secs.
