Blend No.6 Za'atar - Can be traced back to biblical times and is used heavily in the Middle East. A wonderfully fragrant spice.
As a BBQ rub it's right up there, it is just not that well known to many of us. Has a light touch and works well with many food types, serve off the grill with warm flat breads and a simple salad.
As a main dish we have come up with a vegetarian dish that will become a firm favourite. We hope you love this dish as much as we do.

Baked Panko Aubergine
A Middle Eastern spice mix Za’atar is traditionally eaten with flat breads. This recipe however works wonderfully, the baked aubergine has crunch while the Za’atar dip brings the whole dish alive.
This recipe serves 4
Heat Level: Mild
Ready in 30 minutes
2 large aubergines
100g plain flour
150g panko breadcrumbs
3 tablespoons grated parmesan
2 teaspoons Spicemasters Za’atar spice mix
2 large eggs
Small amount of oil for brushing
Salt for seasoning
For The Dip
1 tblsp tahini paste
1 tblsp sour cream
2 tblsp lemon juice
1 tblsp soy sauce
½ teaspoon Spicemasters
Za’atar spice mix
1. Aubergines - Cut in half and the 1cm slices.
2. 3 Bowls - 1 plain flour, 2 eggs mixed, 3 breadcrumbs, with the Za’atar and parmesan mixed.
3. Coat Aubergines - Pass the aubergine slices through the flour, egg then the breadcrumbs.
4. Bake - Brush one side of the aubergines lightly with oil using a pastry brush. Place side by side on a rack on a tray and bake in the oven at 200 degrees centigrade for 15 minutes.
5. Dip - Whilst the aubergine is baking make the dip. Combine all the dip ingredients and stir vigorously until combined, if it is too thick add a few teaspoons of water to desired thickness.
6. Season - After 15 minutes remove from the oven and sprinkle with a little salt to taste.
7. Serve - Serve the aubergine whilst they are still hot, with the dip accompanying.
Spice Master Tips
Aubergines - Slice them and lightly salt them and then let them sit on kitchen paper to release excess moisture
Dip - A versatile dip that works well with a variety of products, use it with carrot, cucumber or breadsticks as as an entrée.
Chill - Whilst you can use the dip immediately, chilling it for a few hours intensifies the flavour.
