Malay Satay Spice No.24 – A dish many of us are familiar with it originates from Indonesia and is popular in Thailand, Malaysia and Singapore.  Usually served on skewers in a sauce we have also included a recipe which is close to a curry.

Can be used with a wide variety of meats, our version is based on classic spices and our recipe will be familiar to many who like a takeaway which incorporates coconut and peanut flavours.  We simply had to make this blend as David would happily drink this sauce on its own.

Spice Master Tips

Kicap Manis - What is this we hear you say.  Well it's a Malaysian sweet thick soy sauce that also has a number of other ingredients that give it a unique taste and whilst there are a number of recipes online for making a similar flavour it’s now readily available at super markets.  It’s really wonderful and once you’ve tried it you’ll want to keep it in the cupboard for using in many dishes.

Coconut Milk - The oil separates in the tin so shake your tin for a good 2 minutes before opening or you will have a solid block on top of the oil.  Another good tip is to open the bottom of the tin instead of the top.

Noodles – The straining in cold water at the end of boiling stops the noodles over cooking and going mushy.
