Kofta Blend No.17 - Kofta is associated with several regions, from India to Greece, what they have in common is they use a mince meat combined with onions and spices. They can me made with a wide range of meats and vegetables and sometimes fish, which is more typical in Indian versions. The Kofta can be shaped either as a ball, pattie or in a sausage shape and formed from minced ingredients. This mince is where it gets its name as Kofta translated means to pound or to grind.

Lamb and Mint Kofta With Flat Bread, Minted Yoghurt & Pickled Red Onions
What a combination, it’s important to get balance into any dish and the use of pickled onions and mint yoghurt adds that balance that cuts though the richness of the meat.
This recipe will work just as well with our Tandoori blend and naan bread.
This recipe serves 4
Heat Level: Mild
Ready in 45 minutes
500g lamb mince
1 teaspoon of Spicemasters Kofta spice
4 large skewers - if using wooden skewers, soak in water for 10 minutes prior to use (this will protect them from burning)
2 tablespoon veg oil
100ml natural yoghurt
A few mint leaves -finely chopped
4 Tortilla wraps or pitta bread
1 medium red onion thin sliced
3 tablespoons red wine vinegar
1. Prepare your ingredients.
2. Mix the Kofta spice, 1 tablespoon of oil and lamb mince together until well combined. Divide into four.
3. Flatten onto the skewers and place on a flat tray. Lightly grease the Kofta's with the other tablespoon of oil.
4. Place under the grill or onto a BBQ for approx. 15 minutes turning occasionally until fully cooked.
5. Meanwhile combine your red onions with the red wine vinegar and set aside to marinade.
6. Combine your mint with the yoghurt and a twist of salt and pepper.
7. When your Kofta is cooked allow to rest, heat your flatbreads under the grill or on the BBQ and serve.
Spice Master Tips
Refrigerate – You can make these ahead of time and place them in the fridge which will do two things, it will deepen the flavour and also allow your mixture to firm up which helps when cooking on the BBQ.
Turning - Don't be tempted to turn them often, allow them to cook for at least 5 minutes to allow the cooking process to firm them up.
Bread – Warming the bread may seem trivial but it does increase the enjoyment, the aroma and softness enhances the whole experience.
