Japanese 7 Spice
Japanese 7 Spice Blend No. 16 – Also known as Shichimi Togarashi it dates back to at least the 17th Century and is traditionally used to flavour soups, noodles and grilled meats.
As well as flavour it is hot too and whilst we normally tone down the heat in our blends we felt it really needed to be balanced with enough heat to make it more in line with its heritage.
Don’t worry it won’t blow your head off but sit rather as an undertone in the background which really lifts the ingredients of this spice blend. Whilst it does work with many meats it does seem to work particularly well with fish on the BBQ.
Used with noodles it can take your mid week quick dish to another level, Dave will often cook chicken noodles on a night when the kids are disappearing off here there and everywhere, as it can be whipped up in as little as 15 to 20 minutes.
All of our spice mixes are hand blended by us to our own recipes in small batches. Our suppliers source our spices direct from the producers all over the world so you get fresh, full flavoured spices that take your cooking to another level.
We cannot tell you how much of a difference using the right spices can make. Togarashi Cod With Soy Buckwheat Noodles
A wonderful quick meal that’s packed full of flavour and goodness. We’ve used buckwheat noodles but you can use your favourite or whatever you have to hand. Ideal for those days when you want a super fast meal.
This recipe serves 4
Heat Level: Medium
Ready in 30 minutes
4 x 5oz cod loins
1 teaspoon Spicemasters Japanese 7 spice
400g buckwheat noodles
100ml Kicap Manis (Sweet soy sauce)
3 tablespoon veg oil
¼ red pepper-sliced
¼ yellow pepper-sliced
¼ green pepper-sliced
1 spring onion-sliced
1. Prepare your ingredients.
2. Place the Japanese 7 spice and 1 tablespoon of oil in a bowl and mix together.
3. Coat the cod loins in the marinade and set aside for five minutes.
4. Boil the buckwheat noodles according to the pack instructions and refresh in cold water.
5. In a frying pan, on a medium heat, add a little oil and pan fry your cod until it starts brown, this should take about three minutes.
6. Turn over and pan fry for a further three to four minutes until the cod is just cooked. Turn off the heat allow to rest.
7. In a separate frying pan heat a little oil and pan fry your sliced peppers and spring onions for a minute.
8. Add your fully drained noodles, just to warm through
9. Add your sweet soy and coat the noodles.
Spice Master Tips
Rest - The fish should be a little opaque when you turn off the heat, it will continue to cook and we don’t want it to dry out.
Pan Frying - The vegetables for just a minute allows them to heat but stops them breaking down too far and becoming soft.
Noodles – The straining in cold water at the end of boiling stops the noodles over cooking and going mushy. Leave them in the strainer until the end and you add them to the frying pan.
