Ras El Hanout Spice
Blend No.12 Ras El Hanout - Common in North Africa, it features heavily in Moroccan cuisine. There is no definitive list of ingredients that make up this spice but there are some commonly used spices that appear more often than not. Our blend has been developed over time so that we could use it as both a BBQ rub and to cook tasty dishes.
The BBQ rub works well with a wide variety of meats, fish and vegetarian meat substitutes and we would encourage you to experiment. As with many highly flavoured mixes it is best accompanied with plain side dishes such as couscous or rice and we have also found a fresh squeeze of lemon juice really lifts the dish.
For a meal we have created a recipe that works with the strong flavours to create a hearty stew that can be created quickly and easily. Serve with your favourite flat bread.
All of our spice mixes are hand blended by us to our own recipes in small batches. Our suppliers source our spices direct from the producers all over the world so you get fresh, full flavoured spices that take your cooking to another level.
We cannot tell you how much of a difference using the right spices can make. It is difficult to keep all the spices you need to make these dishes, so buying them here, already blended, will save you time and also money as you will typically get 5 meals for 4 people from one 50g tin or 50g refill packs.

Braised Chicken In Ras El Hanout
A wonderful fragrant spice blend, used extensively in North Africa. There are many variations on this mix. This dish can be prepared quickly and then placed in the oven to cook'
This recipe serves 4
Heat Level: Mild
Ready in 30 minutes
4 medium chicken breasts
1 large onion
2 large carrots - thinly sliced
4 tomatoes - chopped
2 tsp SpiceMasters Ras El Hanout mix
1 pt vegetable or chicken stock
1 tin of chickpeas - drained
4-6 mint leaves - chopped
12 black olives 2 tbsp of oil
1. Prepare your ingredients.
2. Mix two teaspoons of Ras El Hanout spice mix with two tablespoons of water then coat the chicken.
3. Add 2 tablespoons of oil to a pan.
4. On a medium heat fry the onion, garlic, carrots and tomatoes for 5 minutes.
5. Add the chicken, olives and mint then transfer into an oven proof dish.
6. Pour the stock over the chicken and place in the oven with the lid on for 25 minutes.
7. Remove the dish from the oven and add the chickpeas. Replace the lid and leave to rest for 5 minutes to warm through.
8. Serve and enjoy.
Spice Master Tips
Rub - Rubbing the chicken with the spices allows the meat to absorb the flavours. For a more intense flavour, marinate the chicken in a covered bowl, place it in the fridge for 4 hours or leave overnight.
Frying - Frying the onion, garlic, carrots and tomatoes for 5 minutes allows them to develop flavour.
Serve - This dish works well with a simple flatbread or can be served with spiced wedges, rice or cous cous.
