Chimichurri No.13 - Has its roots in South America but its origins are probably Basque and loosely translate as “a mixture of things in no particular order. It’s blend is deceptively simple and can be used as a dry rub or used within a dish to replicate the original sauce. It has a beautiful delicate taste that when used as a dry rub enhances the flavour of any meat. It is subtle and yet full of flavour.
If you’ve ever been to a steak house and loved the smell as you walked through the door and flavour of the steak but wondered why it tasted just that much better than when you cook it at home, this could very well be the answer. Simply add your preferred meat, a teaspoon of oil and a teaspoon of our blend to a bowl and leave for 15 mins to an hour and you’ll wonder how you ever got by without it.

We cannot tell you how much of a difference using the right spices can make. It is difficult to keep all the spices you need to make these dishes, so buying them here, already blended, will save you time and also money as you will typically get 5 meals for 4 people from one 50g tin or 50g refill packs.

Chimichurri Pork Madallions With Stir Fried Vegetables
It has a beautiful delicate taste that when used as a dry rub enhances the flavour of any meat. It is subtle and yet full of flavour.
This recipe serves 4
Heat Level: Mild
Ready in 30 minutes
4 x 5oz pork loins
2 tablespoons veg oil
1 bunch flat parsley
2 tablespoons red wine vinegar
2 teaspoons Spicemasters Chimichurri spice
¼ red pepper-sliced
¼ yellow pepper-sliced
¼ green pepper-sliced
1 packet baby corn blanched and refreshed
1 medium tomato- cut into 8
1 medium carrot- cut into strips
200g fine green beans cooked and refreshed
1. Prepare your ingredients.
2. In a bowl, mix 1 teaspoon of Chimichurri with 2 tablespoon of oil. Put to one side for ten minutes to infuse.
3. Chop the parsley and marinade in the red wine vinegar and 1 teaspoon of Chimichurri spice.
4. In a pan on a medium heat fry your pork medallions on both sides for a few minutes until cooked. Set aside to rest.
5. Using the same frying pan add a little veg oil and pan fry your vegetables for two minutes.
6. Place the vegetables on the plates, top with the pork and drizzle over the parsley.
Spice Master Tips
Pan Frying - the vegetables for just a few minutes allows them to heat stops them breaking down too far and becoming soft.
Same Pan - We fry them in the same pan we cooked the pork to allow them to soak up all the flavour left in the pan.
Resting meat - We rest the meat after cooking as this allows the meat to retain the juices when cutting and eating making it juicer and tastier.
