Blend No.11 Berbere - The backbone of Ethiopian Cuisine, a complex flavour that is very versatile. It uses many spices to make this blend. Its many layers of flavour make for a complex aromatic mix that is unique.
As a BBQ rub it is certainly very different and it works well. Serve it with a simple bean salad or lentils.
Its earthy aromatic flavours were designed for slow cooking and as such we decided to do a recipe that makes an easy and quick stew that tastes fantastic. It will give you a good idea of how wonderful this blend works if you decided to slow cook a bigger piece of meat and allow the flavours to develop even more.
All of our spice mixes are hand blended by us to our own recipes in small batches. Our suppliers source our spices direct from the producers all over the world so you get fresh, full flavoured spices that take your cooking to another level.
We cannot tell you how much of a difference using the right spices can make. It is difficult to keep all the spices you need to make these dishes, so buying them here, already blended, will save you time and also money as you will typically get 5 meals for 4 people from one 50g tin or 50g refill packs.

Berbe Key Wat Stew
This is an Ethiopian style stew, and the spice mix gives a beautiful deep flavour. This version is made with vegetables but can be made with chicken, beef or lamb (cooking times will increase but the recipe is the same – allow 1 hour for chicken, 2 hours for beef and lamb).
This recipe serves 4

Ready in 30 minutes
1 tbsp Spicemasters Berbere spicemix
150g sweet potato–peeled and diced
150g button mushrooms
150g Butternut squas h– peeled, deseeded and diced
2 medium carrots – peeled and medium diced
1 green pepper - diced
1 large onion – diced
2 cloves garlic – minced
400g tin chopped tomatoes
1 chicken stock cube
1. Prepare your ingredients.
2. Heat 2 tablespoons oil in apan.
3. Fry the onion and carrot on a high heat to brown all over. Keep stirring to avoid sticking to the pan.
4. Add the sweet potato, butternut squash and mushrooms and cook for a few minutes.
5. Add the berbere spices and pepper, stir in.
6. Add the garlic, chopped tomatoes, stock cube and 200ml hot water. Bring it to the boil and then reduce to a simmer.
7. Simmer and allow to cook for half an hour.
8. Turn off the heat and allow to rest for a further 5 minutes.
9. Serve and enjoy. This dish works well with flat bread and cous cous or a side of your choice.
Spice Master Tips
Order - The order that all the ingredients are cooked is unusual it is important as it will affect the taste fo the finished dish.
Frying - the onions and carrots first allows them to loose moisture and help them breakdown quicker which will help the sauce thicken.
Meat - If you want to add meat or chicken this should be done between step 2 and 3. Continue to fry until it has coloured but not cooked through.
Simmer - It’s important, it allows the tomatoes to break down and the flavours to mature. It also reduces the water content making the sauce thicken.
